Creamy Italian MeatballsServes: 4
INGREDIENTS 500 g beef mince 1 egg, lightly beaten 1/2 cup dry breadcrumbs 2 tsp MAGGI Beef Stock Powder 1 Tbsp oil 1 onion, sliced 1 red capsicum, sliced 1 Tbsp cornflour 1 tsp paprika 2 tsp MAGGI Beef Stock Powder, extra 1/4 cup tomato paste 375 mL CARNATION Light & Creamy Evaporated Milk 1/2 cup water
METHOD
- Combine mince, egg, breadcrumbs and MAGGI Beef Stock Powder, and form meat mixture into balls.
- Heat oil in frying pan, add meatballs, cook until browned and cooked through. Remove from pan and keep warm.
- Add onion and capsicum to pan, cook 2 minutes. Add combined remaining ingredients and bring to the boil, stirring. Return meatballs to pan and simmer 2 minutes.
- If desired, garnish with chopped parsley.
