Creamy Italian Meatballs

Creamy Italian Meatballs

Serves: 4

INGREDIENTS

 

500 g beef mince
1 egg, lightly beaten
1/2 cup dry breadcrumbs
2 tsp MAGGI Beef Stock Powder
1 Tbsp oil
1 onion, sliced
1 red capsicum, sliced
1 Tbsp cornflour
1 tsp paprika
2 tsp MAGGI Beef Stock Powder, extra
1/4 cup tomato paste
375 mL CARNATION Light & Creamy Evaporated Milk
1/2 cup water

METHOD

 

  1. Combine mince, egg, breadcrumbs and MAGGI Beef Stock Powder, and form meat mixture into balls.
  2. Heat oil in frying pan, add meatballs, cook until browned and cooked through. Remove from pan and keep warm.
  3. Add onion and capsicum to pan, cook 2 minutes. Add combined remaining ingredients and bring to the boil, stirring. Return meatballs to pan and simmer 2 minutes.
  4. If desired, garnish with chopped parsley.
