Mild Curried Pumpkin, Potato and Carrot Soup

Preparation Time: 15 minutes
Cooking Time: 25 minutes
Serves: 4

INGREDIENTS

 

1 Tbsp oil
1 onion, chopped
3 cups chopped pumpkin
2 carrots, chopped
2 potatoes, chopped
2 tsp curry powder
4 cups water
1 Tbsp MAGGI Chicken Stock Powder
375mL can CARNATION Light & Creamy Evaporated Milk

METHOD

 

  1. Heat oil in large pan, add vegetables, cook for 2 minutes, then stir in curry powder.
  2. Add water and MAGGI Chicken Stock Powder, bring to the boil. Simmer, covered, for 20 minutes.
  3. Blend or puree vegetables and liquid in batches until smooth. Return to pan, add CARNATION Light & Creamy Evaporated Milk, reheat without boiling. If desired, serve garnished with chopped parsley or coriander.
