Mild Curried Pumpkin, Potato and Carrot SoupPreparation Time: 15 minutes Cooking Time: 25 minutes Serves: 4
INGREDIENTS 1 Tbsp oil 1 onion, chopped 3 cups chopped pumpkin 2 carrots, chopped 2 potatoes, chopped 2 tsp curry powder 4 cups water 1 Tbsp MAGGI Chicken Stock Powder 375mL can CARNATION Light & Creamy Evaporated Milk
METHOD
- Heat oil in large pan, add vegetables, cook for 2 minutes, then stir in curry powder.
- Add water and MAGGI Chicken Stock Powder, bring to the boil. Simmer, covered, for 20 minutes.
- Blend or puree vegetables and liquid in batches until smooth. Return to pan, add CARNATION Light & Creamy Evaporated Milk, reheat without boiling. If desired, serve garnished with chopped parsley or coriander.
