Light Berry Cheesecake

Light Berry Cheesecake

Serves: 10

INGREDIENTS

 

BASE
125 g plain sweet biscuits, crushed
60 g butter or margarine, melted
----------------------------------------
FILLING
375 g light cream cheese
1/2 cup sugar
375mL can CARNATION Light & Creamy Evaporated Milk
1 tsp vanilla
1 Tbsp gelatine
1/4 cup hot water
300 g mixed berries

METHOD

 

BASE

  1. Combine biscuit crumbs and butter or margarine, mix well. Press into base of 22cm springform pan, refrigerate until firm.

FILLING

  1. Beat cream cheese and sugar until smooth. Gradually beat in CARNATION Light & Creamy Evaporated Milk and vanilla.
  2. Dissolve gelatine in hot water, cool, beat into cheesecake mixture. Pour mixture over crumb crust, refrigerate until set.
  3. Decorate as desired with berries.
