Light Berry CheesecakeServes: 10
INGREDIENTS BASE 125 g plain sweet biscuits, crushed 60 g butter or margarine, melted ---------------------------------------- FILLING 375 g light cream cheese 1/2 cup sugar 375mL can CARNATION Light & Creamy Evaporated Milk 1 tsp vanilla 1 Tbsp gelatine 1/4 cup hot water 300 g mixed berries
METHOD BASE
- Combine biscuit crumbs and butter or margarine, mix well. Press into base of 22cm springform pan, refrigerate until firm.
FILLING
- Beat cream cheese and sugar until smooth. Gradually beat in CARNATION Light & Creamy Evaporated Milk and vanilla.
- Dissolve gelatine in hot water, cool, beat into cheesecake mixture. Pour mixture over crumb crust, refrigerate until set.
- Decorate as desired with berries.
