Herb Pancakes with Tomato, Feta and Spinach Topping

Preparation Time: 10 minutes
Cooking Time: 15 minutes
Serves: 4

INGREDIENTS

 

PANCAKES
1 1/2 cups self-raising flour
pinch salt
2 Tbsp chopped parsley or basil
375ml can CARNATION Light & Creamy Evaporated Milk
2 eggs
----------------------------------------
TOPPING
200 g feta cheese, cut into cubes
4 tomatoes, chopped
2 cups baby spinach leaves
2 Tbsp oil
2 Tbsp vinegar

METHOD

 

PANCAKES

  1. Sift flour and salt into bowl, add herbs and combined CARNATION Light & Creamy Evaporated Milk and eggs, mix to smooth batter.
  2. Heat non-stick or lightly greased pan. Add ¼ cup of pancake mixture, cook until bubbles appear on surface, turn and cook until golden. Repeat with remaining mixture.

TOPPING

  1. Place feta, tomatoes and spinach in bowl. Combine oil and vinegar, toss through.
  2. Top pancakes with topping, before serving.
