Herb Pancakes with Tomato, Feta and Spinach ToppingPreparation Time: 10 minutes Cooking Time: 15 minutes Serves: 4
INGREDIENTS PANCAKES 1 1/2 cups self-raising flour pinch salt 2 Tbsp chopped parsley or basil 375ml can CARNATION Light & Creamy Evaporated Milk 2 eggs ---------------------------------------- TOPPING 200 g feta cheese, cut into cubes 4 tomatoes, chopped 2 cups baby spinach leaves 2 Tbsp oil 2 Tbsp vinegar
METHOD PANCAKES
- Sift flour and salt into bowl, add herbs and combined CARNATION Light & Creamy Evaporated Milk and eggs, mix to smooth batter.
- Heat non-stick or lightly greased pan. Add ¼ cup of pancake mixture, cook until bubbles appear on surface, turn and cook until golden. Repeat with remaining mixture.
TOPPING
- Place feta, tomatoes and spinach in bowl. Combine oil and vinegar, toss through.
- Top pancakes with topping, before serving.
