Salmon Burger

Ingredients

  • 500 g potatoes, cooked and mashed
  • 1 packet MAGGI Parsley Sauce Mix
  • 1 egg, lightly beaten
  • 210g can salmon, drained and flaked
  • 1 tsp grated lemon rind
  • 1/2 cup dried breadcrumbs
  • 1/4 cup grated parmesan cheese
  • 2 Tbsp oil
  • 4 hamburger buns, cut in half and toasted
  • tartare sauce
  • lettuce leaves
  • tomato slices

Method

  1. To make salmon patties; combine potatoes, sauce mix, egg, salmon and lemon rind.  Shape into patties.
  2. Combine breadcrumbs and parmesan cheese.  Roll patties in crumb mixture.  Place on a flat tray, cover and refrigerate until firm.
  3. Heat oil in a frying pan, cook patties over a medium heat for 3-4 minutes per side or until patties are golden brown and warmed through.
  4. To assemble burgers; top bottom halves with salmon patties, tartare sauce, lettuce and tomato.  Top with remaining bun half.
