Try this easy baked chicken with the skin removed; it’s a much healthier option than fried chicken as it has way less fat. This recipe also works well with chicken drum sticks – it just needs longer cooking. Check out the home-made coating recipe overleaf if you don’t have MAGGI So Crispy on hand.

**Alternatives for Breadcrumb Mix: If you
don’t have So Crispy Recipe Mix you can
make your own crispy coating with, 1 cup of
dried breadcrumbs, one teaspoon of Stock
Powder and one teaspoon of dried herbs or
lemon pepper.

So Crispy Recipe Mix

How to make:

  1. Preheat oven to 200°C/180°C fan forced, line oven tray with baking paper. Lightly
    beat egg in a bowl.
  2. Halve each chicken breast lengthways to make 4 evenly sized, thin schnitzels
    (approximately 125g each).
  3. Coat chicken pieces in egg, shake off any excess; then coat in Recipe Mix, turning
    over and pressing crumbs on firmly.
  4. Transfer coated chicken pieces to prepared oven tray. Bake for 25 minutes or until cooked.
  5. Serve with a green salad and kumara or potato.

*if you don’t have chicken breast use skinless chicken pieces and cook for 45 minutes or
until cooked.
