The dressing for this salad uses both yoghurt and mayonnaise, giving a delicious, creamy and healthy finish. It also works well with kumara for a delicious change.

Ingredients

Ingredients • Serves: 8

1kg whole small potatoes; or
6 large potatoes, cut into chunks
4 gherkins, diced (optional)
1 small onion or 2 spring onions,
finely chopped
1⁄2 cup chopped parsley or mint

Dressing
1⁄3 cup
unsweetened low fat yoghurt
1⁄4 cup low fat mayonnaise
1 teaspoon MAGGI Green Herb
Stock Powder
2 teaspoons wine vinegar

How to make:

  1. Boil the potatoes in un-salted water until cooked but still firm.
    Drain and cool.
  2. In a large bowl, cut the potatoes into cubes and add the rest of the
    salad ingredients, mixing carefully.
  3. Combine the dressing ingredients in a small bowl or jug and pour over
    the salad.
  4. Chill before serving and garnish with parsley, gherkin and red onion
    if desired. Serve.
