2 teaspoons canola oil or cooking spray
400g lean pork or skinless chicken, cut into cubes
1 onion, cut in wedges
4 cloves garlic, diced
4 cups fresh or frozen vegetables such as green beans, capsicum, carrots, celery– thinly sliced
1 can pineapple pieces in juice, drained, 440g – reserve the juice
1⁄4 cup tomato sauce
1⁄4 cup white vinegar
2 tablespoons reduced salt soy sauce
2 tablespoons cornflour

How to make:
- Heat oil in a large non-stick pan or wok and brown pork or chicken with the onion and garlic over a medium heat for 6–8 minutes.
- Add the rest of the vegetables an stir fry for 5 minutes.
- Mix together the pineapple juice, sauce, vinegar and soy sauce and the cornflour until smooth.
- Stir into the pork and vegetable mixture and cook, stirring until mixture boils and thickens.
- Serve with brown rice.
