2 teaspoons canola oil or cooking spray
400g lean pork or skinless chicken, cut into cubes
1 onion, cut in wedges
4 cloves garlic, diced
4 cups fresh or frozen vegetables such as green beans, capsicum, carrots, celery– thinly sliced
1 can pineapple pieces in juice, drained, 440g – reserve the juice
1⁄4 cup tomato sauce
1⁄4 cup white vinegar
2 tablespoons reduced salt soy sauce
2 tablespoons cornflour

How to make:

  1. Heat oil in a large non-stick pan or wok and brown pork or chicken with the onion and garlic over a medium heat for 6–8 minutes.
  2. Add the rest of the vegetables an stir fry for 5 minutes.
  3. Mix together the pineapple juice, sauce, vinegar and soy sauce and the cornflour until smooth.
  4. Stir into the pork and vegetable mixture and cook, stirring until mixture boils and thickens.
  5. Serve with brown rice.
