What is Evaporated Milk?

You probably recognise the CARNATION brand in the red tin, maybe from when you were a kid. A lot of people may even find a can of CARNATION Cooking Milk (previously known as CARNATION Evaporated Milk) in the back of the cupboard. But very few people actually know what evaporated milk is, or are familiar with all its uses.

Basically, CARNATION evaporated milk is made from fresh, Australian milk that has had about 60 per cent of the water content removed. Virtually all the nutrients that you find in fresh milk, like buttermilk, lactose, minerals and vitamins are retained in this process. So, like milk, it’s a great source of calcium. That slightly caramelised colour of evaporated milk comes from the heat during the evaporation process.

You can use CARNATION as a milk substitute, just by adding water back into it, and that’s probably why your grandparents used it – before we all relied on refrigeration. But it’s when you use CARNATION in place of cream in cooking that things really start to get interesting.

CARNATION Evaporated Milks can be substituted for cream into most creamy dishes. It works well in creamy sauces and soups, or you can bake it into quiches and casseroles. CARNATION also comes in coconut flavour, so you can create delicious Asian curries and meals.

By using CARNATION cooking milk, you get almost all the nutrients of milk, with the consistency and mouth taste of cream. Evaporated milk is naturally low fat, in fact CARNATION Light & Creamy and CARNATION Light & Creamy Coconut are 98.5% fat free. Once you swap to CARNATION, you won’t know what you did without it.

CARNATION Evaporated Milks are basically fresh, Australian milk that has been evaporated, taking away about 60% of the water, but leaving behind virtually all the nutrients of fresh milk, such as calcium.

When you substitute CARNATION Evaporated Milk for cream, you instantly reduce the fat and kilojoules of the dish. It’s that easy.

The CARNATION products that are gluten free are:

The CARNATION Light & Creamy Evaporated Milk cannot be whipped like the CARNATION Creamy Evaporated Milk as it has a lower fat content. It is the fat that is needed to hold the air bubbles when whipping it. CARNATION Light & Creamy Evaporated Milk can be whipped after chilling, it will not hold its shape as well as CARNATION Creamy Evaporated Milk.

To prevent separating/ curdling, it is important to ensure the product is added last and simmered for only a few minutes, otherwise the milk will begin to separate. Corn flour can be added to prevent separation. Wheat flour also works but has a more starchy flavour. Mix 1 tablespoon corn flour to cold 375mL evaporated milk before cooking.

CARNATION Evaporated Milk can be frozen however we don’t recommend it as with all milk products it may separate upon defrosting and become watery. However is ideal used to replace cream in ice cream and semi fredo’s.

Yes, CARNATION Light & Creamy Evaporated and CARNATION Creamy Evaporated Milk are interchangeable.

Evaporated Milk is fresh milk from which 60% of the water content has been removed by gentle evaporation. There is no sugar added to this product. Sweetened Condensed Milk is milk that has 60%of the water removed and then had sugar added to it. These products should not be used as direct substitutes for one another.

Each can is labelled with a "Best Before" date. Product within its recommended shelf life would have best quality, freshness and performance. We would not recommend using product beyond the indicated date for quality reasons.

The process of evaporating milk will give a slightly off-white colour, caused by a caramelisation of the natural milk sugars. The product ages or is left in a particularly warm environment, the product will continue to darken.

The ratio is 1 part (by volume) of the evaporated milk to 1 ¼ part (by volume) water.

As the CARNATION Light & Creamy Cooking Milk product has had 98.5% of the fat removed we don’t recommend it’s use in a slow cooker as the milk will begin to separate. Because of the higher protein content of cooking milk it may burn during cooking of slow cooked meals.

As the CARNATION Light & Creamy Evaporated Milk product has had 98.5% of the fat removed we don’t recommend it’s used in a pressure cooker as it may separate or burn. Because of the higher protein content of evaporated milk it will burn under the high pressure used by pressure cookers.

Yes, refrigerate after opening in an airtight glass or plastic container and, as with any fresh milk, use within 5 days.

As the product sits, milk solids may separate from the fluid milk. This separation in itself is not an indication that the milk is spoiled. It is simply a natural occurrence that can usually be corrected by shaking the can prior to opening or by stirring the contents after the milk has been poured into a container.
