8 small wholegrain pita breads; or 4 large
8 teaspoons tomato paste (salt reduced)
Toppings, chopped or sliced
1⁄2 cup grated Edam cheese

Suggested Toppings:
- lean ham or shredded chicken
(skin removed)
- tuna (in spring water) or mackerel
- vegetables
- onion
- mushrooms
- capsicum (any colour)
- fresh or dried herbs
- fresh or canned pineapple

How to make:

  1. Preheat oven to 220°C grill and line oven tray with baking paper.
  2. Spread about 1 teaspoon of paste over the small pita breads or 2 teaspoons over the large pita
    breads, and place on oven tray.
  3. Add selected toppings, including vegetables. Finish with a sprinkle of grated cheese..
  4. Grill for 3-4 minutes or until cheese is melted and bubbly.
  5. Serve with a green salad or vegetables of your choice.
