400g cooked mussel meat, chopped*
2 spring onions, finely sliced
2 cloves garlic, crushed
1⁄2 cup chopped parsley
2 eggs, lightly beaten
1 teaspoon MAGGI Green Herb Stock Powder
1⁄4 cup flour, sifted
1⁄4 cup low fat milk
Cooking spray
How to make:
- First step of mussel fritter recipe is to combine all the ingredients except the cooking spray in a large bowl and mix gently.
- Heat a large non- stick fry pan. Spray with oil and cook large spoonfuls of the mixture for
2-3 minutes each side. - Serve on slices of wholegrain bread with salad and lemon if desired. Enjoy the mussel fritter recipe!
* Mussels need to be very fresh and well chilled. Discard any that are open or with
damaged shells. Remove any stringy beard. Add 2 cups of water to a large pot, bring to
the boil and add the mussels. Steam until most have opened up and discard any that
remain closed. Cool and remove the mussels; chop them coarsely.
