Yes, CARNATION Light & Creamy Cooking Milk is the same as CARNATION Light & Creamy Evaporated Milk.
CARNATION Evaporated Milks are basically fresh, Australian milk that has been evaporated, taking away about 60% of the water, but leaving behind virtually all the nutrients of fresh milk, such as calcium.

The CARNATION Light & Creamy Evaporated Milk cannot be whipped like the CARNATION Creamy Evaporated Milk as it has a lower fat content. It is the fat that is needed to hold the air bubbles when whipping it. CARNATION Light & Creamy Evaporated Milk can be whipped after chilling, it will not hold its shape as well as CARNATION Creamy Evaporated Milk.
To prevent separating/ curdling, it is important to ensure the product is added last and simmered for only a few minutes, otherwise the milk will begin to separate. Corn flour can be added to prevent separation. Wheat flour also works but has a more starchy flavour. Mix 1 tablespoon corn flour to cold 375mL evaporated milk before cooking.

Evaporated Milk is fresh milk from which 60% of the water content has been removed by gentle evaporation.There is no sugar added to this product. Sweetened Condensed Milk is milk that has 60%of the water removed and then had sugar added to it. These products should not be used as direct substitutes for one another.
Each can is labelled with a "Best Before" date. Product within its recommended shelf life would have best quality, freshness and performance. We would not recommend using product beyond the indicated date for quality reasons.
The process of evaporating milk will give a slightly off-white colour, caused by a caramelisation of the natural milk sugars. The product ages or is left in a particularly warm environment, the product will continue to darken.

Yes, refrigerate after opening in an airtight glass or plastic container and, as with any fresh milk, use within 5 days.
As the product sits, milk solids may separate from the fluid milk. This separation in itself is not an indication that the milk is spoiled. It is simply a natural occurrence that can usually be corrected by shaking the can prior to opening or by stirring the contents after the milk has been poured into a container.
