Ingredients • Serves: 6

2 teaspoons canola oil or cooking spray
1.5kg chicken pieces (breast, thigh, drumstick), skin removed
2 onions, finely chopped
4 garlic cloves, crushed
2 teaspoons curry powder or paste, adjust quantity to taste
2 teaspoons MAGGI Chicken stock
500ml boiling water
1 tablespoon tomato paste
2 tablespoons unsweetened natural yoghurt

Chopped fresh coriander or spring
onions to garnish (optional)

 

How to make:

1. Heat oil in a large non-stick fry-pan and brown chicken over a medium heat for 6–8 minutes. Remove from the pan and set aside.
2. Stir-fry onions for 5 minutes or until soft. Add garlic, curry powder or paste and stir for 2 minutes.
3. Add stock powder, water and tomato paste and mix well and add the chicken. Bring to the boil, then reduce the heat, cover and simmer for 45 minutes or until tender, turning chicken occasionally.
4. Place chicken in a serving dish, leaving the sauce in the pan. Heat sauce over a high heat for 2–3 minutes until reduced and thickened. Take pan off the heat and stir in yoghurt, then pour sauce over chicken.
5. Garnish with coriander or spring onions if desired and serve with rice or naan bread and plenty of steamed vegetables.
