  • 1½ cups (225g) self-raising flour, sifted
  • ½ cup (30g) bran flakes, lightly crushed
  • ¾ cup (165g) brown sugar
  • 80g butter, melted
  • ½ cup (125mL) milk
  • 2 eggs, lightly beaten
  • 1 medium ripe banana, mashed
  • ⅔ cup HIGHLANDER Caramel


  1. Preheat oven to 180°c/160°c fan forced. Line a 12-hole (⅓ cup/80mL) muffin pan with paper cases.
  2. Place flour, bran flakes and sugar in a large bowl. Pour over combined butter, milk, eggs and banana; mix until just combined.
  3. Using an ice cream scoop or spoon, place muffin mixture evenly into the prepared muffin pan. Spoon HIGHLANDER Caramel on muffin mixture, swirl thoroughly with a skewer. Bake for 25-30 minutes or until cooked. Cool the muffins in the pan before turning them out.
